Ingredients

  • ½ medium sized Red Cabbage

  • 2 medium sized carrots

  • ½ cup crushed roasted almonds

  • 1/3 cup sunflower seeds

  • 1/3 cup pumpkin seeds

  • 1 tblspn Lemon juice

  • 2 tblspn Sesame oil

 
 
Method
1. Grate carrots & finely slice red cabbage. 2. Mix together with seeds, lemon juice & oil. 3. Serve as a side or as a base with fresh fish or steamed chicken breast.


Tips
Great way to bulk make for dinner & lunches the next day.  
Store in an airtight container.
For leftover lunch option, serve with 2 boiled eggs & few pieces of haloumi.
